Eloísa Martín, Ph.D. is a cultural sociologist, and the first food scholar to study Emirati cuisine. She devoted the last 4 years to learn from the best Emirati chefs and home-cooks the traditional and contemporary recipes that talk to the heart of Arabic Gulf culture. Eloísa curated the menu for this unique night that portrays a hidden gem in international cuisine. The menu portrays Gulf or khaleeji flavors, which are very different from what is commonly known as “Arabic food”, by combining the pungency of Indian spices and the sophistication of Persian perfumes. The dishes variety in what is today known as the United Arab Emirates also reflects the three main landscapes in the country. Coastal region, besides the great variety of seafood, has historically been multicultural, due the intense maritime commerce, and this shown in recipes that adopt foreign cooking techniques and fusion dishes. Desert represent the journey through sand dunes, where nomadic Bedouin tribes have creatively adapted their lifestyle to the environment and created a hospitality culture, which has gahwa (the traditional Emirati coffee) as a central ritual for social life. Oasis are the regions where palms provided the most important staple, the dates, but also created a protected space from the heat to cultivate vegetables and fruits. This is the region where both people from the coast and from the desert find shelter during the very hot summers. Oasis are the place of joy, family gatherings and sweet childhood memories.
